Book inspired by family tradition


LOVE OF FOOD: Mother and daughter team, Danielle and Taylor Schultz, are letting South Gippslanders in on some of their favourite, traditional Lebanese cuisine. 

HAVING someone in your life who is genuinely invested in your happiness, wellbeing and success can transform you.

For Danielle Schultz, her loving grandmother was one of those influential people.  

It was through this supportive relationship that her love of Lebanese food blossomed.

“I was at a restaurant with my husband one night when his drink came out with a sprig of fresh mint,” Danielle said.

“The scent took me back to when I was six years old. It was a Saturday morning and after putting away all the fruit from the markets that my grandmother had bought, we went into the garden and harvested bags full of fresh mint.

“We sat there for hours, and cleaned and picked off stalks ready for drying.

“I think that was the day my love of the kitchen really flourished. I loved being my grandmother’s shadow; she was my idol.”

Later in life, Danielle’s grandmother, Adele Elhosni, developed severe dementia.

Danielle would call her every night at 6pm on the dot.

“It perked up her day. I would ask her how to make the meals she did when I was a kid,” Danielle said.

“I started writing them down, and then started teaching my daughter, Taylor, how to make these original Lebanese recipes.”

Sadly Adele passed away a few years back, but her legacy lives on through the work of Danielle and Taylor who have immortalised their memories of her and her traditional recipes in a cook book.

Released in April this year, A Village Feast opens the lid of a variety of delectable original Lebanese recipes.

The cuisine, based on the Levantine style of cooking, focuses on an abundance of wholegrains, fruits, vegetables, starches, fresh fish and seafood.

“Poultry is eaten more than red meat and when red meat is eaten, it is usually lamb,” Danielle said.

“It also includes copious amounts of garlic and olive oil, often seasoned by lemon juice.

“Chickpeas and parsley are also staples of the Lebanese diet.”

Danielle and Taylor’s book steps you through the process of making these mouth watering meals.

If you want to see how the experts do it, Danielle and Taylor often attend local markets where they demonstrates the art using local, fresh produce.

While generously promoting the crop of the area, their work is also having a positive impact elsewhere.

“For every book we sell, we donate $10 towards a charity,” Danielle said.

Danielle, who was diagnosed with Crohn’s disease in 2012, is passionate about helping other suffers and raising awareness of the illness. 

At present, the mother-daughter team has sold enough copies of the book to buy 40 ostomy teddy bears for children with Inflammatory Bowel Disease.

“We will be giving them out to hospitals with an IBD clinic including Sale and The Royal Children’s Hospital,” she said.

“A lot of the recipes in our book are really Crohn’s friendly too.”

Recently just launched was Danielle and Taylor’s own falafel mix using all Australian produced and grown products.

Danielle is from Moe and works in Leongatha.
